Smash Burgers with House Sauce

Ingredients

  • Burgers:

  • 1 pound ground beef (80/20)
  • 4 tablespoons butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt & pepper
  • 4 brioche buns
  • 4 slices American cheese
  • Additional butter for toasting buns
  • Additional toppings (optional): Lettuce, sliced onions, sliced tomatoes, pickles
  • Sauce:

  • 1/2 cup mayo
  • 1/2 shallot, finely minced or grated
  • 2 tablespoons ketchup
  • 1 tablespoon dill pickles, roughly chopped
  • 1/2 tablespoon sriracha
  • 1 teaspoon horseradish
  • 1/2 teaspoon smoked paprika

Instructions

Step 1

Mix ground beef, melted butter, Worcestershire sauce, smoked paprika, garlic powder and salt and pepper in a large bowl with hands just until combined, careful not to overmix. Form mixture into 4 equal balls. Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.

Step 2

While burger mixture chills, mix sauce ingredients in a small bowl.

Step 3

Heat a cast iron skillet or griddle over medium heat. Generously butter brioche buns. Add buns cut side down and toast until golden brown. Remove and set aside.

Step 4

Increase heat to high. Cut a sheet of parchment paper into four rectangles. Place 1-2 burger balls into preheated skillet. Place parchment paper on top of each burger and use a burger press or the bottom of a heavy pan to apply even pressure until thinly smashed. Cook for one minute; flip and top with a slice of cheese. Let cook for an additional 1-2 minutes until cheese is melted and burger is cooked. Remove from skillet and set aside to rest while you finish cooking the remaining burgers.

Step 5

Assemble burgers by placing one burger on each bun and topping with sauce and other desired toppings.
