Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into 1-inch pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1/2 cup dry white wine
  • 1 cup heavy whipping cream
  • 1/2 cup chicken stock
  • 1 (18-ounce) package shelf-stable or refrigerated potato gnocchi
  • 1/2 cup grated parmesan cheese, plus more for garnish
  • 1/3 cup sun dried tomatoes, chopped
  • 1/2 Tablespoon lemon zest
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes
  • 2 cups baby spinach leaves

Instructions

Step 1

Heat olive oil in a large skillet over medium-high heat. Add chicken and season with Italian seasoning, salt and pepper. Cook for 4-5 minutes or until chicken reaches an internal temperature of 165°F. Remove chicken onto a plate and set aside.

Step 2

Melt butter in the same pan over medium heat. Add garlic and cook for 30 seconds or until fragrant. Add wine and cook until reduced in half, scraping up any brown bits stuck to the bottom of the pan.

Step 3

Add heavy cream, chicken stock and gnocchi; bring to a simmer. Cook for 5 minutes or until sauce is thickened and the gnocchi is tender.

Step 4

Reduce heat to medium-low, add parmesan cheese, sun dried tomatoes, lemon zest, smoked paprika and crushed red pepper flakes. Stir to combine. Add spinach and stir to wilt. (Add a splash of water as needed to loosen the sauce).

Step 5

Add chicken back to skillet and stir to combine. Remove from heat and serve immediately. Garnish with additional parmesan cheese.
