Bacon Blue Cheese Dip

This dip is delicious as a game day appetizer or a quick party food. Present it with celery and carrot sticks for a fresh bite, or serve it wonderfully hearty with a buttered baguette.

Ingredients

  • 4 tablespoons unsalted butter, divided
  • 2 teaspoon minced garlic
  • 16 oz. cream cheese, softened
  • 1/2 cup heavy cream
  • 6 oz. Blue cheese crumbles
  • 5 slices bacon, cooked and crumbled
  • 1/4 cup chopped chives, divided
  • 1/4 cup chopped pecans, divided
  • 1 baguette

Instructions

Step 1

Preheat oven to 350 °F.

Step 2

In a 10-inch cast iron skillet over medium heat, melt half of the butter. Swirl the melted butter in the pan to coat the edges. Add the garlic and cook until lightly golden. Remove from heat.

Step 3

Pour garlic and melted butter into the bowl of an electric mixture fitted with a paddle attachment. Add the softened cream cheese and beat on low setting until smooth. Slowly add heavy cream, beating until combined. Add blue cheese crumbles, bacon, 2 tablespoons chopped chives and 2 tablespoons chopped pecans. Spread mixture in the bottom of the buttered cast iron pan.

Step 4

Place the dip in the hot oven, and bake for 20 minutes or until bubbly. Remove from oven and let cool slightly. Top with remaining chives and pecans. Serve the dip while still warm with baguette slices (see below), or cool to serve with fresh veggies.

Cut baguette into rounds and place on a parchment lined baking sheet. Liberally spread each baguette round with remaining butter and toast until golden, about 10 minutes. Remove from the oven and let cool and enjoy with blue cheese dip.
