A beautiful presentation for one of life’s more simple pleasures - the baked egg. Feel free to add cheese, herbs, crumbled bacon, or veggies. The possibilities for customizing these baked egg boats are endless, making this a weeknight go-to meal regardless of what is in your fridge.

Ingredients

  • 1 baguette, cut into 4 pieces
  • 4 tablespoons butter, room temperature
  • 4 eggs
  • flaked sea salt
  • ground black pepper
  • 2 tablespoons flat leaf parsley, chopped

Instructions

Step 1

Preheat oven to 350°F. Line baking sheet with parchment paper or foil. Set aside.

Step 2

Cut an oval into the top of each baguette piece. Scoop out enough bread dough to make a large hole, being careful not to hollow out bottom.

Step 3

Spread butter on bottom and up sides of hollowed-out section. Crack egg into each baguette piece. Season with salt and pepper.

Step 4

Bake for 15 to 20 minutes, or until eggs are set to desired stage. Sprinkle with parsley and serve immediately.
