No Bake Key Lime Bars

A great treat for summer, you don't have to heat up the house to enjoy these light and creamy key lime bars. Quick to make, mix these up and pop them in the fridge to set and they're sure to be a hit.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 14 ounces sweetened condensed milk
  • 3/4 cup key lime juice
  • Zest of 2 regular limes
  • 2/3 cup heavy whipping cream

Instructions

Step 1

Line an 8x8-inch pan with foil.

Step 2

Mix graham cracker crumbs, butter and sugar in a large bowl until the mixture resembles wet sand. Press the crust into the bottom of the pan, using the back of a measuring cup to ensure it is a compacted and even layer. Place in freezer while you prepare the filling.

Step 3

In a large bowl using an electric mixer, mix cream cheese until smooth. Add sweetened condensed milk, lime juice and zest; mix until combined.

Step 4

In a separate bowl, whisk the heavy whipping cream until stiff peaks form. Carefully fold the whipped cream into the lime mixture just until combined.

Step 5

Pour the filling onto the chilled crust. Cover and refrigerate at least four hours or overnight. Slice and serve with additional garnished lime zest.
