Buffalo Beer Cheese Dip

Ingredients
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 cup beer
- 1 cup whole milk
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 shredded Havarti cheese
- 1/2 cup American cheese slices, roughly torn
- 1/3 cup diced pickled jalapeños
- 1/4 cup buffalo sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 1/4 teaspoon salt
- Pretzel bites, for serving
Instructions
Step 1
Melt butter in a medium saucepan over medium heat. Add flour; whisk until mixture starts to turn golden brown, about 2 minutes.Step 2
While whisking, slowly pour in beer and milk. Whisk until mixture is smooth. Bring to a simmer; cook for 5 minutes or until mixture is thick and coats the back of a spoon.Step 3
Reduce heat to low and add cheese. Stir until melted. Add pickled jalapeños, buffalo sauce and seasonings. Stir to combine. Adjust seasoning as necessary. Keep over low heat until ready to serve. Serve with pretzel bites and additional pickled jalapeños.A Dairy Farmer’s Devotion to Feeding Others
