Butter-Basted Egg Breakfast Sandwich

This isn’t your average breakfast sandwich. Butter-basted eggs, crisp bacon, and melted gouda come together between toasted bread slathered with a raspberry-chili butter that’s equal parts sweet heat and rich flavor. A little fancy, a lot buttery.

Ingredients

  • 6 tablespoons butter, softened and divided
  • 2 large eggs
  • Salt and pepper
  • Pinch red pepper flakes
  • 1 1/2 tablespoons raspberry preserves
  • 1 teaspoon chili crisp
  • 2 slices bread
  • 2 slices gouda cheese
  • 2 slices bacon, cooked crisp

Instructions

Step 1

Melt 3 tablespoons butter in a large skillet over medium heat. Add 2 eggs. Carefully tilt the pan and use a spoon to baste butter over the egg whites until whites are cooked through, about 2-3 minutes. Season with salt, pepper and red pepper flakes.

Step 2

Combine the remaining butter, raspberry preserves and chili crisp in a small bowl. Toast bread and spread butter on one side of each piece.

Step 3

Layer one slice of toast, butter side up, with gouda, eggs and bacon; top with remaining bread.
