Ingredients

  • Chili Lime Butter:

  • 1/2 cup unsalted butter, room temperature
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • Zest of 1 lime
  • Corn:

  • 6 ears corn, husked
  • Butter
  • Fresh cilantro
  • Cotija cheese

Instructions

Step 1

Mix compound butter ingredients in a small bowl and set aside.

Step 2

Heat grill to high heat.

Step 3

Bring a large pot of water to boil over high heat. Add corn and simmer for 3 minutes. Remove from heat and cool slightly.

Step 4

Lightly butter the corn and place on grill; cook for 5-7 minutes or until kernels are slightly charred. Remove from grill and serve immediately with chili lime butter. Garnish with fresh cilantro and crumbled cotija cheese.
