1/2 cup butter, room temperature
2 Tablespoons chopped basil
2 Tablespoons chopped flat leaf parsley
2 cloves garlic, minced
zest of one lemon
2 teaspoons lemon juice
salt and pepper to taste 6 ears corn
In a small bowl, add butter, basil, parsley, garlic, zest, lemon juice, salt and pepper. Mix until ingredients are combined. Place butter in plastic wrap and roll into a log. Chill until ready to use.
Preheat a grill over high heat. Lightly oil grates. Remove the husk and silk from corn. Place corn on grill, and cook for 30 minutes, turning occasionally. Remove from grill and coat with lemon basil butter.
