  • For the Graham Cracker Crust:

  • 2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 cup (1 stick) butter, melted
  • For the Blackberry Filling:

  • 2 cups heavy whipping cream
  • 8 ounces cream cheese, at room temperature
  • 3/4 cup sugar
  • 1 teaspoon lemon zest
  • 1 1/2 cups fresh blackberries, plus extra for topping
  • 1/2 teaspoon vanilla extract


For the Graham Cracker Crust:

Step 1

Butter a 10-inch round pie dish.

Step 2

Mix together graham cracker crumbs, sugar and butter until combined. Press mixture into bottom of prepared pie dish. Set aside.

For the Blackberry Filling:

Step 3

In small bowl, mash blackberries slightly with fork. Set aside.

Step 4

In large bowl, whip heavy whipping cream with electric mixer until soft peaks form. Set aside.

Step 5

Combine cream cheese, sugar, lemon zest, blackberries and vanilla and mix until smooth. Fold in whipped cream. Pour mixture on top of crust.

Step 6

Freeze for 4 hours or overnight. Allow to thaw 10-15 minutes before cutting with sharp knife and serving. Top with fresh blackberries if desired.
