Stovetop Tomato Basil Chicken
This Stovetop Tomato Basil Chicken is a flavorful weeknight meal you can make all summer long. You can cook and puree fresh tomatoes from the garden, or make it a little more simple with a store-bought sauce. Browning the chicken in butter is what gives it that perfect crispy exterior while locking in all of the juices.

Ingredients
- 3-4 chicken thighs or breasts
- 3 tablespoons butter
- 1 teaspoon Italian seasoning, divided
- salt and pepper to taste,
- 1 cup tomato sauce
- 1 teaspoon minced garlic
- 1/4 cup packed basil leaves, finely chopped
Instructions
Step 1
Melt butter in large skillet over medium heat. Sprinkle chicken with 1/2 teaspoon Italian seasoning and salt and pepper to taste. Add chicken to pan and cook 6-8 minutes on each side or until cooked through and lightly browned. Transfer chicken to a plate and cover with foil.Step 2
Add garlic to pan and sauté 1-2 minutes until fragrant. Add tomato sauce, remaining Italian seasoning, chopped basil and salt and pepper to taste. Bring to boil, then reduce heat to medium-low. Cover and allow to simmer 5-8 minutes.Step 3
