Ingredients

  • 1 package (32 ounces) frozen cubed hash browns, thawed
  • 10 tablespoons butter, divided
  • 1 small yellow onion, finely diced
  • 1 teaspoon minced garlic
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups chicken stock
  • Salt and pepper to taste
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup sour cream
  • 2 cups corn flakes, crushed

Instructions

Step 1

Place potatoes in a colander in a clean sink; press gently to drain excess water. Preheat oven to 350?F. Grease a 9 x 13-inch baking pan.

Step 2

Melt 6 tablespoons butter in a large skillet over medium heat. Add onion and cook 3-4 minutes or until onions start to soften. Add garlic; cook 30 seconds. Sprinkle flour over the top and whisk, cooking 1-2 minutes, being careful not to let the flour brown.

Step 3

Slowly whisk in milk, stirring until smooth. Add chicken stock, whisking continuously. Season with salt and pepper; reduce temperature to low and simmer until sauce thickens. Remove from heat and stir in cheese and sour cream. Add hash browns to cheese sauce and stir gently to combine. Season again with salt and pepper. Pour mixture into prepared pan.

Step 4

Melt remaining 4 tablespoons butter. Add crushed corn flakes and toss to coat. Sprinkle evenly over potatoes. Cover with foil and bake 20 minutes. Remove foil and bake 15-20 minutes more or until golden brown and bubbling. Let potatoes cool at least 10 minutes before serving.
